For Bill Prolux, maple sugaring began as just a hobby. In 1993 he set out to make his first-ever batch of homemade maple syrup and collected 20 buckets (and one lasagna pan) full of sap from the maple trees of friends and neighbors. It all boiled down to just a few gallons of syrup and his friends and family couldn’t get enough of it! So naturally, Bill decided to tap more trees and keep his well-loved maple syrup flowing.

It’s been 15 years since Bill made his first batch of syrup, and there is a lot more than just a few gallons to go around. This winter season, Bill tapped over 2,000 trees and collected 38,000 gallons of sap!

River’s Edge is tucked away in the hills of Northeastern Connecticut, beside Mount Hope River. Drop by the farm stand for this year’s maple syrup, maple candy, maple cream and jelly. And don’t forget to try River’s Edge Honey, which Bill extracts from his own hives and bottles himself. Maple sugaring tours are available throughout the sugaring season.
